Acadiana Spice's list of often asked questions:

Q: What is the primary ingredient in Acadiana Spice?

A:   It would do everyone some good just to use a little cayenne pepper on their food unless you have an ulcer. This information was found in numerous places repeating the main points mentioned. So according to the da husband, "That's it. Pepper's a good spice."  Also all the other spices have antitoxidants and the link (McCormicks) has the list with their standing.   Five out of OUR seven ingredients are on that list!   http://cfprod.mccormick.com/msi2prod/content.cfm?ID=10461
Q: What is the portion size of salt used if you want to add salt to this spice blend?
A:  Acadiana Spice is made without salt because, according to them experts, most of us should watch our salt intake. We figured we'd leave the salt up to you, ... the customer. However, if you add three quarters of one ounce of salt (1.5 Tablespoons), then mix several times to ensure the salt is incorporating with the other spices (or just shake it real, real good), you should have the right ratio. The salt will not be overbearing in the spice if you stick to this recommendation.  I would use Sea Salt, its a better salt.
