This is pork sausage meat stuffed in a pig's stomach and smoked. Once cooked, this Cajun delicacy it is sliced into meat patties. The same dish, if it's not smoked before cooking, is called a Chaudin  (pronounced "sho-dan").  We get all of our meats from Lejuene's Sausage Kitchen in Eunice, LA.  They offer a variety of pork, mixed meats and garlic sausages, tasso and ponse.  Their hands-on processing, patience and three generations of experience results in high quality products that are always consistent in smoked Cajun flavor.
